Meal of the month![]() Name: Tinga
Origin: Puebla Ingredients: Chicken, onion, garlic, chipotle, tomato, oregano, bay leaves, thyme, salt, pepper. Preparation: In a medium sauce pan, combine chicken breasts, onion, garlic and water. Cook on medium high heat until done. Shred chicken breasts with a fork and set aside. In a large skillet with a lid, heat oil, spices and whole onions that have been finely chopped. Sauté on medium low heat until onions are translucent and soft. Prepare blended sauces of tomatoes, garlic, onion, chipotle, and water. Increase heat to medium high and pour sauce.Add in shredded chicken and cover with lid. ![]() Name: Cochinita Pibil
Origin: Yucatan Ingredients: Lean pork, achiote, lemon, banana leaves or foil, rice, tortillas, beans, red onions. Preparation: Disolve the Achiote with lemon juice and water. Pour mixture over pork and marinate for 3 hours or overnight. If using banana leaves, cut into pieces to fit a roasting pan. Remove center ribs from leaves and use for tying. Lay a couple of strings (long enough to tie around pork) in bottom of roasting pan. Place leaves on top of strings, place pork and marinade on top of leaves. Fold banana leaves over pork and tie with strings. Cover pan and bake in oven at 325 for 1 1/2 hours. Serve with rice, warm corn tortillas, black beans and red onions in vinegar. |
