Dr Uxo is lecturer and coordinator of the Spanish Program at Latrobe University. His PhD degree was precisely about the influence of the black culture in the Cuban literature. This topic still remains as his research priority. |
Meal of the month
Name: Moros y Cristianos
Ingredients: rice, beans, onions, garlic, pepper, oregano, bay leaf. Preparation: Moros y cristianos means “Moors and Christians”. "Moors" refers to the black beans, and "Christians" to the rice. First the moros are boiled in water. Next the rice is cooked in another pot with some of the water from the beans. Onions, garlic, bell pepper, oregano and bay (laurel) leaf are commonly cooked as a sofrito beforehand and added to the dish to give additional flavour. |

His unique all-rounded capabilities make one of Melbourne's consummate Salsa artists. Manuel has studied with some of the most esteemed dancers, artists and choreographers in Cuba (Raices Profundas, Yoruba Andabo), Brazil, Argentina and Australia. |
