Name: Matambre Origin: Argentina and Uruguay Ingredients: 2 pound flank steak, juice of 1 lime, 2 teaspoons oregano, 1 teaspoon kosher salt, black pepper, 2 cloves garlic, minced, teaspoon red pepper flakes, 1 cup spinach leaves, half a cup of grated romano or parmesan cheese, 2 carrots, half of green bell pepper, 1 red bell pepper, half a cup of large green olives, 3 hard-boiled eggs
Preparation: A dish made of a matambre meat roll stuffed with vegetables, hard-boiled eggs and herbs, then boiled or oven-roasted. It is served sliced—with the fillings making a colourful display—either hot or cold. It is often eaten with chimichurri sauce. It is a rather fatty meat and is usually eaten with vegetables. Pork matambre is also used.
